Impress Mom with your cooking skills this Mother’s Day! Our Petite Filet with Orzo Pasta Salad will not only keep you at the top of her favorites list, but it is a great entrée all year long!
2 3 oz Tenderloin Steak
2 oz Crab Meat
2 Tbsp Balsamic Vinegar
1 C Orzo Pasta
1/4 Red Onion, Finely Diced
1/2 English Cucumber, Finley Diced
8 Cherry Tomatoes, Quartered
1/4 C Feta Cheese, Crumbled
1 Tbsp Fresh Oregano, Chopped
1 tsp Fresh Mint, Chopped
3 Tbsp Red Wine Vinegar
1/2 C Extra Virgin Olive Oil
Fresh Cracked Pepper
1.) In a shallow baking dish, season steaks with kosher salt and fresh cracked pepper.
2.) Toss seasoned steak in olive oil and Balsamic Vinegar to coat and set aside at room temperature
3.) Heat a salted pot of water to a boil
4.) Add orzo to boiling water and cook until al dente (about 3-4 minutes)
5.) Drain orzo and set in fridge to cool 15 minutes
6.) Heat grill to medium high heat and grill steaks 3-4 minutes per side for medium rare
7.) Remove from heat and allow steaks to rest
8.) Remove chilled orzo from fridge and gently stir in remaining ingredients along with ½ cup of extra virgin olive oil
9.) Place desired portion on a plate
10.) Slice steaks thin or leave whole and plate with orzo
11.) Serve immediately
