2 Tbsp Butter
4 Tbsp Minced Shallots
1 Tbsp Minced Garlic
3 Tbsp All Purpose Flour
1 C Stout Beer
1 C Heavy Cream
20 oz Shredded Cheddar Cheese
1 Tbsp Kosher Salt
1 tsp Dry Mustard
1/8 tsp Cayenne Pepper
1) Melt the butter in a heavy bottom sauce pot, add shallots and garlic and cook on low heat until translucent.
2.) Turn the stove to medium heat and stir in the flour to form roux.
3) While stirring, stream in the beer and heavy cream and slowly bring to a simmer ensuring that you have cooked out the starches in the roux.
4) Use a stick blender to puree smooth and slowly add in shredded cheddar cheese and seasonings.
5) Serve hot with your favorite lightly oiled, oven toasted bread or crostini.
